For more than three decades, Pedro Saez-Del Burgo has been at the heart of Filliers Distillery, one of Belgium’s oldest family-run grain distilleries. As master distiller, Pedro has carried forward a legacy rooted in craftsmanship, authenticity, and an unbroken tradition of knowledge passed from generation to generation. Pedro began his journey with Filliers Distillery 32 years ago, learning the art of distilling directly from Jan Filliers, the 5th generation of the Filliers family. Under Jan’s mentorship, Pedro immersed himself in every aspect of the distillation process, from selecting grains and setting the mash, to fermentation, distillation, maturation, and tasting. Now, as the 6th generation of the family takes its place in the distillery with Benoit Filliers, Pedro continues to pass on his wisdom, not only as a technician or craftsman, but as a living link between past and future. His dedication to the Filliers heritage, combined with an unwavering commitment to quality, has made him a cornerstone of the distillery’s continued success. Pedro oversees the entire production process of Filliers’ range of spirits, including their renowned genever and whisky. With over 6,000 barrels aging in the warehouses, Pedro’s refined palate and precise craftsmanship play a critical role in shaping the character and depth of each distillate. He is widely respected not just for his technical mastery, but also for his humility and his passion for the craft. Pedro’s career is a rare example of lifelong dedication to a single house, embodying the values of authenticity, patience, and quiet excellence.
